Because we are based in San Ramon, this is one of our closest service areas, and I know these machines by the failure pattern the local water leaves on them.

The KM crescent design tolerates hard water better than most spray cubers, but tolerating is not immunity. Scale still builds on the evaporator plate faster than the manual's cleaning schedule assumes, and the first symptom is quiet: daily production slides. When a machine is down 20 percent from its rated output, I check the plate before I touch anything with a gauge on it.

What we close on the truck.

  • Hot gas valve leaking during freeze cycle. When the KM hot gas valve fails to seat fully, hot discharge gas bleeds into the evaporator during freeze. Cycles run long, the bin fills slowly, and owners blame the compressor. We confirm it with temperature readings across the valve, replace it, and freeze times come back to spec.
  • Evaporator scale slowing production on busy machines. A boulevard restaurant running its KM-500 hard through summer fouls the plate in months, not years. Thin crescents that bridge together in the bin are the tell. We descale the full water circuit with nickel-safe chemistry and log the cycle times so you can see the recovery.
  • Water pump losing prime or running noisy. Scale eats the KM circulation pump from the inside. First it whines, then it cavitates, then the plate gets uneven water flow and the ice comes off malformed. Caught early it is a straightforward pump swap. We also descale at the same visit, because a new pump in a scaled system dies young.
