Dacor vs Wolf 48-Inch Dual-Fuel Ranges: Steam, Griddles and Everyday Care

Compare Dacor DOP48T960DS/DA and Wolf DF48650G/S/P for steam-assisted cooking, griddle layout, cleaning and the checks to make before installation.

Dacor’s DOP48T960DS/DA makes sense if you want steam-assisted cooking in its larger right oven. Wolf’s DF48650G/S/P gives you a built-in infrared griddle next to six burners. Dacor’s optional griddle sits over two of its six burners, so you’re down to four burner spots for pots while it’s on.

This compares those two US configurations. Both put gas burners on top and electric ovens below. It isn’t a reliability ranking.

Check the model and fuel before comparing features

Dacor lists the DOP48T960DS/DA for natural gas and liquid propane, with an LP conversion kit. Its installation instructions say the range ships set up for natural gas and leave the conversion to a professional installer.

Wolf’s US product page lists the DF48650G/S/P. Wolf sells the propane version under its own model number, DF48650G/S/P/LP. The DF48650G reference sheet shows the six-burner, infrared-griddle layout covered here.

Get the model suffix, gas configuration, included accessories and current availability on the quote. If the quoted model changes, compare its documents again before you approve an order or cabinetry.

Dacor steam assist adds a water-care routine

The Dacor user manual puts Steam Bake and Steam Roast in the larger right oven. They aren’t in the small left oven’s mode table. You can set steam to low, medium or high.

If a dish needs steam, plan the rest of the meal around keeping the right oven free for it.

Steam also adds upkeep. Dacor says to drain leftover water after steam cooking, empty the reservoir and descale when prompted. Keep using steam past the reminder period and the steam functions shut off until you descale. Follow the manual and the display for your range, and remember the reservoir can be hot.

Before you choose Dacor for steam, ask for a demo with a recipe you actually cook, and have someone walk you through the water care.

Compare the oven modes and controls

Wolf’s listed modes are Bake, Roast, Broil, Convection, Convection Roast, Gourmet, Proof, Stone, Dehydrate and Warm. Steam assist isn’t listed for the DF48650G/S/P.

The Wolf use-and-care guide explains that Gourmet suggests a rack position and picks the cooking settings. Stone isn’t available in the 18-inch oven, and Stone and Dehydrate need accessories.

Dacor also lists Chef Mode guided cooking in its spec sheet. Try each range’s controls yourself, including picking the left or right oven and changing its settings. If two people share the cooking, both should try them.

The griddles use the cooktop differently

Dacor’s current spec sheet lists the ARG48 griddle as optional and sold separately. The manual puts it over the two center burners. While it’s on, those burners belong to the griddle and aren’t free for pots.

Wolf’s configuration has a dedicated, thermostatically controlled infrared griddle next to six burners. That matters if you often griddle while several sauces or sides cook in pans.

With the showroom’s OK, lay out your usual cookware on a cold range. Check handle clearance and whether the pots you use together fit. Bring the size of your largest roasting pan, handles included, and check both ovens. Cubic-foot totals matter less than whether the pans you own fit with the clearance they need.

Include cleanup in the demo

Dacor warns against metal utensils on its optional griddle’s nonstick coating and says to clean it after every use. Let the griddle and the surfaces around it cool before you take it off.

Wolf’s griddle needs seasoning. Its care steps cover scraping grease into the collection tray, wiping the cooled surface and putting on a little oil. Use that model’s full procedure, and don’t borrow a cleaner or scraping method from another griddle.

In the showroom, look at where the grease collects and how you get to it for cleaning. Decide where you’d store Dacor’s removable griddle when you want all six burners.

Have the installation checked separately

Both are nominal 48-inch ranges, so the fit comes down to your opening. The installer should check the current model documents against the cabinets, door clearance, ventilation, gas supply, electrical service and anti-tip requirements. Leave gas conversion, connections and wiring to the pros.

FAQ

Common questions.

Does dual fuel mean the oven can run on gas or electricity?
No. On these models gas feeds the burners on top and electricity heats the ovens. Propane compatibility is about the gas side. It doesn't turn the ovens into gas ovens.
Does Dacor's small oven offer Steam Bake too?
No. The DOP48T960DS/DA manual lists Steam Bake and Steam Roast for the right oven only. If you plan to cook two dishes at once, check that the right oven fits your pans and will be free.
