What Actually Fails (and What the Fix Involves)

Ice makers are the most service-intensive commercial appliance in the Tri-Valley, partly because of the hard water. The three most common calls: unit stopped making ice, ice tastes or smells off, or the bin floods. Scale buildup on the evaporator plate kills production. Reach-in coolers and walk-in refrigeration that won’t hold temp usually point to a few things: condenser coils packed with grease or dust, a weak compressor, a refrigerant leak, or a failed evaporator fan motor. You can check one thing yourself: look at the condenser coil (bottom or back of the unit) for obvious grease buildup. Beyond that, diagnosing which component is failing takes manifold gauges, temperature probes, and electrical testing. Refrigerant work is federally regulated; you can’t legally buy or handle it without an EPA card.

Commercial ovens and ranges that fail to heat or ignite typically have a bad igniter, faulty gas valve, failed heating element, or a control board issue. Igniters are measurable with a meter. Gas valve repair means shutting off the supply, pressure testing, and verifying the safety interlock before restoring gas. That’s not a task to attempt without commercial gas-appliance training. An incorrect reassembly is a hazard for everyone in the kitchen.

Commercial dishwashers fail on heating elements, wash pump motors, and solenoid valves. If dishes aren’t sanitizing (final rinse not hitting temp), or the unit leaves standing water after a cycle, a tech checks element continuity, pump amperage, and water inlet pressure. A machine not reaching the minimum rinse temperature isn’t just inconvenient; it’s a health code issue.
